Method
Our first reserve wine was made using hand-picked and hand-sorted fruit from Numeral Mountain Vineyard, a beautiful site in the foothills of the Cascade Mountains that overlooks the majestic Columbia River in Entiat. We destemmed the berries into small bins for a 3-day cold soak, followed by 12 days of primary fermentation. The wine was sent to a combination of French and American oak barrels for malolactic fermentation and 18 months of aging. We bottle aged for 1 year before releasing to our Reserve Wine Club.
