Tasting Notes

Dark cherries, black plums, wild raspberries, cinnamon, cabinet spice and leather dominate the palate with hints of vanilla, sweet tobacco and cracked pepper. Robust yet refined tannins lead into a tropical finish of citrus, mangos and grapefruit. Serve with filet mignon over Portobello mushrooms and balsamic glaze, dark chocolate or aged cheddar.

Method

A blend of Cabernet Sauvignon using two clones from Elephant Mountain Vineyard and a single clone from Bacchus Vineyard. Hand-picked, hand-sorted fruit fermented in small bins and barrel-aged in a blend of 50% new French oak from Tonnellerie Quintessence and Seguin Moreau. We bottle-aged this beauty for 6 months in our cellar prior to release.
