Tasting Notes
Layers of black cherry and blackberries meld with spices like cinnamon, cardamom, and red pepper with hints of vanilla, and sweet tobacco. The palate is full with immense tannin and flavors of black cherry, red curry, coffee, and cinnamon roll with herbal notes. The finish is long and savory with lingering flavors of ripe black fruits and plenty of spice.

Method
Hand-picked, hand-sorted, and fermented in small bins. We aged this beauty in 25% new French and 25% new American oak barrels for 18 months and bottle-aged for one year in our cellar prior to release. Enjoy with paella, burgers, rib-eye, or baked pasta dishes with red sauce.
These wines are tasting great right now with decanting for 8-24 hours but we recommend cellaring at home for a few years. We know it’s hard, but both of these wines are age-worthy. Give them 5-15 years, if you can.
